Tajima Wagyu Bresaola paves the way with back-to-back wins in Sydney and Melbourne

Tajima Wagyu Bresaola has taken top honours at both the Melbourne Royal Australian Food Awards and the Sydney Royal Fine Food Show for two consecutive years.
Announced last week at the Melbourne Royal Australian Food Awards, the Tajima Wagyu Bresaola took home the Champion Smallgoods title for the second year running with a score of 91.6 out of 100. Earlier this year, the bresaola also secured a Champion medal at the Sydney Royal Fine Food Show, with a score of 92 out of 100.

Produced by long-time partners De Palma Salumi, Tajima Wagyu Bresaola is crafted from carefully selected cuts of Tajima Australian Grainfed Wagyu. De Palma Salumi’s process follows traditional Italian techniques, taking several months to cure and mature each piece. Cuts from the top round and silverside are trimmed and traditionally air-dried, resulting in bresaola that highlights the natural flavour, tenderness and marbling characteristics of Tajima Australian Grainfed Wagyu.
With its second consecutive Champion title at both the Melbourne and Sydney competitions, Tajima Wagyu Bresaola further cements its reputation as a benchmark for excellence in artisan smallgoods and highlights the consistent quality of Tajima Australian Grainfed Wagyu.
Separate from the bresaola, Andrews Meat Industries walked away more major victories at the prestigious Melbourne Royal Australian Food Awards, with W. Black wagyu crowned the Champion in the Branded Meat category. With a score of 94 out of 100, judges described W. Black as a “fantastic eating experience [with] fine marbling throughout and great colour”.
